A main carrying beam that is undersized, spliced poorly or has lost bearing at one end deflects, and every joist resting on it follows.
Persistent crawlspace or basement moisture degrades sill plates, joist ends and posts until they lose capacity. This is very common where a crawlspace has a bare dirt floor.
When part of the foundation moves down, the framing above moves with it, producing slope that often shows up first as sticking doors.

No. Many older Vermont homes settled early in their life and have been stable for decades. The distinction that matters is whether movement is ongoing. Dated measurements and photographs answer that; recollection generally does not.
Sometimes, and usually gradually. Lifting an old structure quickly can crack plaster, break finishes and open joints elsewhere. The safest plan often stabilises the current position rather than promising a full lift, and any planned lift should be described with its risks before you agree to it.
Bounce is generally a stiffness problem rather than a failure: long spans, undersized or damaged joists, missing bridging, or a beam and post arrangement carrying more than it was built for. Moisture damage to joist ends over a damp crawlspace is a common contributor here.
